Our reds ferment in traditional lagares with minimal intervention, favouring the natural colour and aromatic extraction of each variety. Whites and sparkling bases are carefully vinified in temperature-controlled stainless steel vats, to bring out the vibrant, aromatic profile of Bairrada.
